Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the rolled oats, whole-wheat flour, baking powder, and cinnamon. Mix well to evenly distribute the dry ingredients.
In a medium bowl, whisk together the applesauce, Greek yogurt, honey (or maple syrup), egg, and vanilla extract until smooth.
Pour the wet ingredients into the bowl with the dry ingredients and stir until fully combined. If using mixed dried fruits or raisins, fold them in at this stage.
Transfer the mixture to the prepared baking pan, spreading it out evenly and pressing it down gently with the back of a spoon or spatula.
