Ingredients

  • 4 medium russet potatoes

  • 0.5 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes (about 1/2-inch). Dice the onion, and mince the garlic cloves.

Step 2

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes. Drain any excess grease and transfer the cooked beef to a plate.
