Ingredients

  • 8 sheets phyllo pastry sheets
  • 0.5 cup unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 large yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 10 cups fresh spinach, roughly chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 large egg, lightly beaten
  • 2 teaspoons sesame seeds (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened and fragrant.

Step 3

Add the spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let the mixture cool slightly.

Step 4

In a large bowl, combine the cooked spinach mixture, feta cheese, dill, salt, and black pepper. Mix well until evenly combined.

Place one phyllo pastry sheet on a clean work surface and brush it lightly with melted butter. Fold it in half lengthwise to create a long strip.

Spoon about 2 tablespoons of the spinach and feta mixture near one end of the strip. Fold one corner of the pastry over the filling to form a triangle. Continue folding the triangle over itself along the strip until fully wrapped.
