Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Gluten-free breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Garlic powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 2 cups Marinara sauce, gluten-free
  • 1.5 cups Mozzarella cheese, shredded
  • 6 leaves Fresh basil leaves (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the chicken breasts between two sheets of parchment paper or plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/2 inch thick.

In a shallow bowl, whisk together the eggs and milk. Set aside.

In another shallow bowl, combine the gluten-free breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
