Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 0.5 cup Cornstarch
  • 1 large Egg
  • 2 cups Vegetable oil (for frying)
  • 3 tbsp Soy sauce
  • 1.5 tbsp Rice vinegar
  • 2 tbsp Hoison sauce
  • 2 tbsp Sugar
  • 0.25 cup Water
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 0.5 tsp Red chili flakes
  • 2 stalks Green onions, sliced (for garnish)
  • 1 tbsp Sesame seeds (for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a mixing bowl, whisk the egg. Add the chicken pieces and toss to coat.

Step 3

Place the cornstarch in a shallow dish. Dredge the chicken pieces in the cornstarch until fully coated. Shake off excess and set aside on a plate.

Step 4

Heat the vegetable oil in a large skillet or pot over medium-high heat. Once the oil is hot and shimmering, fry the chicken in batches for 3-4 minutes, until golden brown and crispy. Remove and place on a paper towel-lined plate to drain.

Step 5

In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, and water to create the sauce. Set aside.

Step 6

In a large skillet or wok, heat 1 tablespoon of the frying oil over medium heat. Add the minced garlic, ginger, and red chili flakes. Sauté for 1 minute until fragrant.

Step 7

Pour the prepared sauce mixture into the skillet and bring to a simmer. Let it cook for 2-3 minutes, stirring constantly, until the sauce thickens slightly.

Step 8

Add the fried chicken into the skillet and toss to coat in the sauce evenly.

Step 9

Remove from heat and garnish with sliced green onions and sesame seeds.

Step 10

Serve immediately with steamed rice or your favorite side dish.
