Ingredients

  • 1.5 pounds baby potatoes
  • 3 tablespoons unsalted butter
  • 3 cloves garlic
  • 3 tablespoons fresh dill
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon lemon juice (optional)

Directions

Step 1

Wash the baby potatoes thoroughly. If the potatoes are larger, cut them in half for even cooking.

Step 2

In a large pot, add the potatoes and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over high heat, then reduce the heat to medium and let the potatoes simmer for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are cooking, finely mince the garlic and chop the fresh dill.

Step 5

Once the potatoes are done cooking, drain them and set them aside.

Step 6

In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 7

Reduce the heat to low and return the potatoes to the pot. Gently toss them in the garlic butter until evenly coated.

Step 8

Sprinkle the chopped fresh dill, black pepper, and an optional splash of lemon juice over the potatoes. Gently toss once more to combine.

Step 9

Serve the garlic dill potatoes warm as a side dish for any meal.
