Ingredients

  • 3 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 small, chopped onion
  • 3 cloves, minced garlic
  • 1 medium, diced carrot
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 stalks, sliced green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.

Step 2

Crack the eggs into the skillet and scramble them until just set. Remove them from the pan and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the chopped onion and cook for 2-3 minutes until softened.
