Ingredients

  • 300 grams Sweetened shredded coconut
  • 200 grams Sweetened condensed milk
  • 2 large Egg whites
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the sweetened shredded coconut with the sweetened condensed milk and vanilla extract. Stir until fully incorporated.

Step 3

In a separate clean, dry bowl, whisk the egg whites with the salt until stiff peaks form. This can be done with an electric mixer or by hand with a whisk.

Step 4

Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites while mixing.

Step 5

Using a tablespoon or a small cookie scoop, drop rounded spoonfuls of the mixture onto the prepared baking sheets. Space them about 1 inch apart.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the macaroons are slightly golden on the edges and firm to the touch.

Step 7

Remove the baking sheets from the oven and allow the macaroons to cool on the sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 8

Once cooled, serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 5 days.
