Preheat your oven to 375°F (190°C).
In a large oven-safe Dutch oven or deep skillet, heat the olive oil over medium heat.
Add the Italian sausages and sear them for about 4-5 minutes per side until browned. Remove and set aside.
In the same pot, add the diced smoked ham and cook for 2 minutes to render some of the fat and deepen the flavor.
Add the chopped onion and cook for 5 minutes, stirring occasionally, until softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Deglaze the pot by pouring in the white wine, scraping up any browned bits from the bottom of the pan.
Add the chicken stock, canned white beans, diced tomatoes with their juice, tomato paste, chopped rosemary, thyme, bay leaf, salt, and pepper. Stir everything to combine.
Nestle the browned sausages back into the mixture, ensuring they are partially submerged.

While the cassoulet is baking, in a small bowl, combine the breadcrumbs with melted butter.
After 45 minutes, remove the lid from the cassoulet and sprinkle the breadcrumb mixture evenly over the top.
Return the pot to the oven, uncovered, and bake for an additional 15-20 minutes, or until the breadcrumbs are golden brown and crispy.
Remove the pot from the oven and let it rest for 5 minutes. Discard the bay leaf.
