  • 1 tablespoon olive oil

Directions

Step 1

Begin by preparing your fresh tomatoes. Wash them thoroughly and remove any stems. To peel the tomatoes, bring a large pot of water to a boil. Make a small 'X' incision at the bottom of each tomato with a knife. Immerse the tomatoes in the boiling water for 30 seconds to 1 minute, then immediately transfer them to a bowl of ice water. Once cooled, peel off the skins and roughly chop the tomatoes.

In a large stockpot, heat the olive oil over medium heat. Add the chopped onion, celery, and green bell pepper. Sauté for about 5 minutes, stirring occasionally, until the vegetables are softened.
