  • 3 minced Garlic cloves
  • 2 cups Long-grain white rice
  • 4 cups Chicken broth
  • 1 cup Tomato sauce
  • 1 cup Frozen peas
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Chopped cilantro (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat.

Season the chicken thighs with half of the salt and black pepper. Sear them in the skillet for 3-4 minutes per side until golden brown. Remove and set aside.
