Ingredients

  • 2 medium Eggplant
  • 3 tablespoons Olive oil

  • 0.5 teaspoon Black pepper
  • 8 ounces Mozzarella cheese
  • 8 slices Ham slices
  • 8 whole leaves Basil leaves
  • 1 teaspoon Garlic powder
  • 1 cup Tomato sauce

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Slice the eggplants lengthwise into 1/4-inch thick pieces. You should get about 8 slices per eggplant.

Step 3

Brush both sides of the eggplant slices with olive oil and sprinkle with salt, black pepper, and garlic powder.

Arrange the eggplant slices in a single layer on the prepared baking sheet and bake for 10 minutes, flipping halfway through. Remove from the oven and let cool slightly.
