Ingredients

  • 4 pounds Beef brisket
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 large Yellow onion, sliced
  • 4 None Carrots, peeled and cut into chunks
  • 4 None Garlic cloves, minced
  • 28 ounces Canned crushed tomatoes
  • 2 cups Beef broth
  • 0.25 cup Brown sugar
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Soy sauce
  • 2 None Bay leaves
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Season the brisket on all sides with kosher salt and black pepper.

Step 3

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the brisket for 4-5 minutes on each side until browned. Remove the brisket and set aside.

Step 4

Reduce the heat to medium and add the sliced onions and carrots to the Dutch oven. Sauté for 5-7 minutes, stirring frequently, until softened and slightly caramelized.

Step 5

Add the minced garlic and cook for another minute until fragrant.

Step 6

Stir in the crushed tomatoes, beef broth, brown sugar, apple cider vinegar, and soy sauce. Mix well to combine.

Step 7

Return the brisket to the Dutch oven, making sure it's nestled into the sauce. Add the bay leaves.

Step 8

Cover the Dutch oven with its lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the brisket is fork-tender.

Step 9

Remove the Dutch oven from the oven and let the brisket rest in the sauce for 15-20 minutes.

Step 10

Slice the brisket against the grain and serve with the sweet and sour sauce and vegetables spooned over the top. Garnish with fresh parsley, if desired.
