Ingredients

  • 1 cup Yellow split peas
  • 3 cups Water
  • 2 tablespoons Vegetable oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, minced
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Curry powder
  • 1 cup Canned diced tomatoes
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the yellow split peas under cold water until the water runs clear, then set them aside.

Step 2

In a medium pot, combine the yellow split peas and 3 cups of water. Bring to a boil over medium-high heat, skimming off any foam that forms on the surface.

Once boiling, reduce the heat to low and let the split peas simmer for 25-30 minutes, stirring occasionally, until they are tender and slightly broken down. Add more water if needed during cooking. Once cooked, set aside.
