Ingredients

  • 200 grams fresh spinach
  • 4 large eggs
  • 120 milliliters milk
  • 100 grams cheddar cheese, grated
  • 30 grams parmesan cheese, grated
  • 50 grams all-purpose flour
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch pie dish or tart pan with a little olive oil.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring, until wilted. Remove from heat and set aside to cool slightly. If there is excess liquid, drain it off.
