Ingredients

  • 4 lbs Pork shoulder (or pork butt)
  • 1 large Onion
  • 1 tbsp Garlic powder
  • 2 tsp Paprika
  • 2 tbsp Brown sugar
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 cup Chicken broth
  • 1.5 cups Barbecue sauce
  • 8 Burger buns
  • 2 cups Coleslaw (optional, for serving)

Directions

Step 1

Peel and thinly slice the onion. Place the slices evenly across the bottom of the crock pot.

Step 2

Trim any excess fat off the pork shoulder and pat it dry with paper towels.

Step 3

In a small bowl, mix garlic powder, paprika, brown sugar, salt, and black pepper.

Step 4

Rub the seasoning mixture all over the pork shoulder, ensuring it is fully coated.

Step 5

Place the seasoned pork shoulder on top of the onion slices in the crock pot.

Step 6

Pour the chicken broth around the pork, ensuring it does not wash off the seasoning.

Step 7

Cover and cook on low for 8 hours, or until the pork is tender and easily shredded with a fork.

Step 8

Once cooked, transfer the pork to a large bowl and shred it using two forks. Discard any large pieces of fat.

Step 9

Drain the liquid from the crock pot, leaving the onions. Return the shredded pork to the crock pot.

Step 10

Stir in the barbecue sauce until the pork is evenly coated. Cover and cook on low for an additional 30 minutes to warm through.

Step 11

Toast the burger buns if desired, and fill each with a generous portion of the pulled pork.

Step 12

Optional: Top with coleslaw for an added crunch and tangy flavor.

Step 13

Serve warm and enjoy!
