Ingredients

  • 2 lbs Pig's foot, cleaned and chopped
  • 1 lb Pork belly, cubed
  • 6 cloves Garlic, minced
  • 1 medium Onion, diced
  • 15 oz Tomato sauce
  • 4 cups Water
  • 3 tbsp Fish sauce
  • 2 medium Carrots, diced
  • 2 medium Potatoes, diced
  • 1 medium Green bell pepper, diced
  • 1 small can (4.25 oz) Liver spread
  • 2 pieces Bay leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Sugar
  • 1 cup Green peas (optional)

Directions

Step 1

Clean the pig's foot thoroughly under running water. Use a knife to scrape off any impurities on the skin. Cut into smaller pieces, if necessary, for easier cooking.

Step 2

In the crock pot, combine pig's foot, pork belly cubes, minced garlic, and diced onion.

Step 3

Pour the tomato sauce and water into the crock pot. Stir in the fish sauce, salt, black pepper, and sugar.

Step 4

Add the bay leaves. Stir the mixture gently to combine the seasonings.

Step 5

Cover and set the crock pot on LOW. Cook for 6 hours, allowing the pig's foot and pork belly to become tender and release their natural flavors.

Step 6

After 6 hours, add the diced carrots, potatoes, and green bell pepper. Stir gently to incorporate the vegetables into the sauce.

Step 7

Stir in the liver spread until it dissolves into the sauce. This will thicken the dish and add richness to the flavor.

Step 8

If using green peas, add them in at this point. Cover and continue to cook for another 2 hours on LOW or until the vegetables are tender.

Step 9

Taste and adjust the seasoning if needed. Remove and discard the bay leaves before serving.

Step 10

Serve hot with steamed white rice or as is in bowls. Enjoy your hearty and flavorful Crock Pot Menudo!
