  • 2 large Bell peppers (red and green), sliced
  • 8 ounces Button mushrooms, sliced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Dry white wine (optional)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until golden brown. Transfer the chicken to the crock pot.
