Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup diced onions
  • 1 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley (optional)

Directions

Step 1

Place the chicken breasts in the bottom of the crock pot.

Step 2

Rinse the white rice under cold water until the water runs clear, then add it to the crock pot.

Step 3

Pour the chicken broth and cream of chicken soup over the chicken and rice. Stir gently to distribute evenly.

Step 4

Add the diced onions, frozen peas and carrots, garlic powder, onion powder, dried thyme, salt, and black pepper. Stir lightly to combine.
