  • 8 small Flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoons Black pepper
  • 1 as desired Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced tomatoes

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add the diced onions and garlic to the skillet. Cook until softened, about 3 minutes.

Stir in the chili powder, cumin, salt, and black pepper. Mix well and remove from heat.

Spread 1/2 cup of enchilada sauce on the bottom of the crock pot to prevent sticking.
