Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 can (15 oz) Canned black beans, drained and rinsed
  • 1 cup Frozen corn kernels
  • 1 can (10 oz) Canned diced tomatoes with green chilies
  • 8 oz Cream cheese, softened
  • 0.5 cup Chicken broth
  • 1 packet (1 oz) Packet of ranch seasoning mix
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 2 cups Cooked rice (optional, for serving)

Directions

Step 1

Place the chicken breasts in the bottom of your crock pot.

Step 2

Add the black beans, frozen corn, and canned diced tomatoes with green chilies (with their juices) on top of the chicken.
