Ingredients

  • 1 lb ground pork or ground chicken
  • 4 stalks green onions (finely chopped)
  • 1 tbsp ginger (grated)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 40 pieces dumpling wrappers
  • 0.25 cup water (for sealing wrappers)
  • 3 tbsp soy sauce (for dipping sauce)
  • 1 tbsp rice vinegar
  • 0.5 tsp chili oil or chili flakes (optional)
  • 0.5 tsp sugar
  • 1 tbsp water (for dipping sauce)

Directions

Step 1

In a mixing bowl, combine ground pork or chicken, green onions, ginger, garlic, 2 tablespoons soy sauce, 1 teaspoon sesame oil, salt, and black pepper. Mix well until fully combined.

Step 2

Prepare a small bowl of water for sealing the dumpling wrappers.

Step 3

Place one dumpling wrapper on a flat surface. Add about 1 teaspoon of the filling in the center of the wrapper.

Step 4

Dip your finger in the water and wet the edge of the wrapper. Fold the wrapper in half over the filling to create a half-moon shape. Press the edges together firmly to seal. If desired, crimp the edges for a decorative look.

Step 5

Repeat with the remaining wrappers and filling.

Step 6

Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Place the dumplings flat-side down in the pan, making sure they don’t touch each other. Cook for 2-3 minutes until the bottoms are golden brown.

Step 7

Pour 1/4 cup of water into the skillet and immediately cover it with a lid. Let the dumplings steam for 5-7 minutes or until the water has evaporated and the filling is cooked through.

Step 8

Uncover the skillet and cook for 1-2 more minutes to crisp up the bottoms again, if desired. Remove from the skillet and repeat with the remaining dumplings.

Step 9

To make the dipping sauce, mix 3 tablespoons soy sauce, 1 tablespoon rice vinegar, chili oil or chili flakes (if using), sugar, and 1 tablespoon water in a small bowl.

Step 10

Serve the dumplings hot with the dipping sauce on the side.
