Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 500 grams ground beef
  • 1 large red bell pepper, diced
  • 400 grams canned diced tomatoes
  • 400 grams canned kidney beans, rinsed and drained
  • 2 tablespoons tomato paste
  • 250 milliliters beef stock
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime lime wedges, for serving

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes until soft and translucent.

Step 3

Add the minced garlic and sauté for another minute until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Stir in the diced red bell pepper and cook for another 3 minutes.

Step 6

Add the canned diced tomatoes, kidney beans, tomato paste, and beef stock. Stir to combine.

Step 7

Stir in the chili powder, ground cumin, paprika, dried oregano, salt, and black pepper.
