  • 1 green bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 garlic cloves (minced)
  • 1 link andouille sausage (sliced)
  • 1 14.5-ounce can canned diced tomatoes (undrained)
  • 1 cup frozen okra (sliced)
  • 1 bay leaf
  • 0.25 teaspoon cayenne pepper
  • 2 cups white rice (cooked, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Season the chicken thighs with salt, black pepper, and paprika. Add them to the pot and cook until browned on both sides, about 3-4 minutes per side. Remove and set aside.

In the same pot, add the andouille sausage and cook until browned. Remove and set aside with the chicken.

Reduce the heat to medium-low and sprinkle the flour into the pot. Stir constantly to create a roux, cooking until it turns a light caramel color, about 5 minutes.

Remove the chicken thighs from the pot, shred them with two forks, and return the shredded chicken to the gumbo. Discard the bay leaf.
