  • 2 tablespoons Chopped cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C), and lightly grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, combine the shredded chicken, black beans, 1 cup of salsa, 1 cup of shredded cheese, cumin, and garlic powder. Mix well to evenly distribute the ingredients.

Step 3

Spread 1/4 cup of enchilada sauce evenly across the bottom of the prepared baking dish.

Lay out a tortilla on a clean surface. Spoon about 1/3 cup of the chicken and black bean mixture onto the center of the tortilla. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
