Ingredients

  • 12 oz rotelle pasta
  • 2 pieces boneless, skinless chicken breasts
  • 15 oz artichoke hearts, quartered
  • 2 tbsp olive oil
  • 2 pieces garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 0.5 cup chicken broth
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotelle pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season the chicken breasts with salt and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until fully cooked and golden brown. Remove chicken from the skillet and let it rest. Once slightly cooled, cut the chicken into bite-sized pieces.

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
