Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 0.5 teaspoon dried thyme
  • 0.5 cup frozen peas
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Directions

Step 1

Season the chicken thighs with salt, pepper, and paprika on both sides.

Step 2

Heat a large, deep skillet or Dutch oven over medium-high heat and add olive oil.

Step 3

Place the chicken thighs skin-side down into the skillet and sear for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 4

In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the rice, ensuring it gets coated in the oil and spices, and cook for 1-2 minutes to toast the grains slightly.

Step 6

Pour in the chicken broth and add the dried thyme. Stir to combine.

Step 7

Nestle the seared chicken thighs into the rice mixture. Bring to a gentle simmer, then reduce the heat to low. Cover with a lid and cook for 20-25 minutes, or until the rice is tender and the chicken is fully cooked (internal temperature of 165°F).

Step 8

In the final 5 minutes of cooking, sprinkle the frozen peas over the rice. Cover and allow them to cook through.

Step 9

Once done, remove from heat and let rest for 5 minutes. Sprinkle with fresh parsley, if desired, and serve warm.
