Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Cremini or button mushrooms, sliced
  • 1 piece Yellow onion, diced
  • 2 cloves Minced garlic
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat and add the olive oil. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 4 minutes on each side, until lightly golden. Remove the chicken from the skillet and set aside.

In the same skillet, melt the butter. Add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
