Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.5 cups almond slices
  • 0.5 cups chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place the chicken breasts on a cutting board and, if necessary, pound them to an even thickness of about 1 inch using a meat mallet.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off any excess, and set aside.

Step 3

Heat a large skillet over medium heat and add 2 tablespoons of butter and the olive oil. Once the butter is melted and sizzling, add the chicken breasts to the skillet.

Step 4

Cook the chicken for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 5

In the same skillet, add the remaining 1 tablespoon of butter. Once melted, add the almond slices and toast them for 2-3 minutes, stirring frequently, until golden and fragrant.

Step 6

Pour the chicken broth and lemon juice into the skillet with the toasted almonds. Simmer the mixture for 2 minutes, stirring to deglaze the pan and combine the flavors.

Step 7

Return the cooked chicken breasts to the skillet, spooning the almond sauce over the top. Simmer for an additional 2-3 minutes to heat through.

Step 8

Remove the skillet from heat and garnish the chicken with chopped parsley. Serve immediately with your choice of sides, such as rice or steamed vegetables.
