Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1.5 cups carrots, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1.5 cups cheddar cheese, shredded
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

In a large pot, bring water to a boil and lightly salt it.

Step 2

Add the broccoli florets, cauliflower florets, and sliced carrots to the boiling water and cook for 5-7 minutes or until tender-crisp. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat.

Step 4

Whisk in the all-purpose flour and cook for 1 minute, stirring continuously, to form a roux.

Step 5

Gradually pour in the milk while whisking to avoid lumps. Continue to cook and stir until the mixture begins to thicken, about 3-4 minutes.

Step 6

Add the shredded cheddar cheese, garlic powder, salt, and black pepper to the milk mixture, stirring until the cheese is fully melted and smooth.

Step 7

Pour the cheese sauce over the cooked vegetables and gently toss until evenly coated.

Step 8

Serve immediately, garnished with additional shredded cheese or fresh herbs if desired.
