Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 15-ounce can black beans, drained and rinsed
  • 1 14.5-ounce can roasted diced tomatoes, undrained
  • 1 cup frozen corn
  • 1 cup sour cream
  • 3 cups shredded Mexican cheese blend
  • 3 cups tortilla chips, roughly crushed
  • 2 stalks green onions, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with nonstick cooking spray and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 3-4 minutes until the onions are soft and translucent.

Step 4

Stir in the taco seasoning, black beans, diced tomatoes (with juices), and frozen corn. Cook for an additional 3-4 minutes to warm through.

Step 5

In a small bowl, mix the sour cream with 1 cup of the shredded Mexican cheese blend.

Step 6

Spread 1/3 of the crushed tortilla chips over the bottom of the prepared casserole dish.

Step 7

Layer half of the beef mixture over the tortilla chips, followed by half of the sour cream and cheese mixture.

Step 8

Sprinkle 1/3 of the remaining shredded cheese over the layer.

Step 9

Repeat the layers with another 1/3 of the tortilla chips, the remaining beef mixture, and the remaining sour cream mixture.

Step 10

Top with the final layer of crushed tortilla chips and the remaining shredded cheese.

Step 11

Bake uncovered in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is golden and melted.

Step 12

Let the casserole cool for 5 minutes before garnishing with chopped green onions.

Step 13

Serve warm and enjoy!
