Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2.5 cups chicken broth
  • 3 cups broccoli florets
  • 4 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 0.25 cup milk
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Slice the chicken breasts into bite-sized cubes. Season the chicken pieces with salt, black pepper, garlic powder, and onion powder.

Step 2

Heat the olive oil in a large skillet or sauté pan over medium-high heat. Add the chicken and cook for about 4-5 minutes, until the pieces are browned on all sides. Remove the chicken from the pan and set aside.

Step 3

In the same skillet, add the uncooked rice and stir it around for 1-2 minutes to lightly toast it.

Step 4

Pour in the chicken broth and bring to a gentle boil. Reduce the heat to low, cover with a lid, and let simmer for 15 minutes.

Step 5

After 15 minutes, lift the lid and layer the broccoli florets evenly on top of the rice. Do not stir. Cover again and continue cooking for 5-7 minutes until the broccoli is bright green and tender, and most of the liquid is absorbed.

Step 6

In a small bowl, heat the cream cheese in the microwave for about 20 seconds to soften slightly. Stir in the milk to create a smooth mixture.

Step 7

Return the cooked chicken to the pan, layering it on top of the rice and broccoli. Pour the cream cheese mixture over the ingredients, then sprinkle the shredded cheddar cheese evenly on top.

Step 8

Cover and let cook for 4-5 more minutes, until the cheese has melted and everything is heated through.

Step 9

Remove from heat and stir gently to combine the melted cheese, rice, and chicken.

Step 10

Serve warm with a sprinkle of fresh parsley on top, if desired. Enjoy!
