Ingredients

  • 10 pieces Corn tortillas
  • 3 cups Shredded Mexican blend cheese
  • 1 cup Sour cream
  • 2 cups Canned enchilada sauce (red or green)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)
  • 1 tablespoon Cooking spray or vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly grease a 9x13-inch baking dish with cooking spray or oil.

Step 3

In a small saucepan, heat the enchilada sauce over medium-low heat until warmed. Remove from heat and set aside.

Step 4

Warm the corn tortillas in the microwave for 15–20 seconds or until pliable to prevent tearing.

Step 5

Spread a thin layer of enchilada sauce on the bottom of the greased baking dish to prevent sticking.

Step 6

Lay one tortilla flat on a clean surface. Add about 2–3 tablespoons of shredded cheese and 1–2 teaspoons of sour cream to the center of the tortilla.

Step 7

Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas, filling and rolling each one.

Step 8

Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring they are fully covered.

Step 9

Sprinkle the remaining shredded cheese evenly over the top of the enchiladas.

Step 10

Bake the enchiladas in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let rest for 5 minutes before serving.

Step 12

Garnish with chopped cilantro, if desired, and serve warm.
