Ingredients

  • 1 head Cauliflower
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 4 cups Vegetable broth
  • 1 cup Unsweetened almond milk (or any milk of choice)
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Chop the cauliflower into small florets and set aside.

Step 2

Dice the yellow onion and mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.

Step 4

Transfer the sautéed onion and garlic to the crock pot.

Step 5

Add the cauliflower florets, vegetable broth, salt, black pepper, and smoked paprika to the crock pot. Stir to combine.

Step 6

Cover the crock pot with the lid and cook on low for 4-5 hours or on high for 2-3 hours, until the cauliflower is tender and easily pierced with a fork.

Step 7

Once cooked, use an immersion blender to puree the soup directly in the crock pot until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender to puree, then return it to the crock pot.

Step 8

Stir in the almond milk (or milk of choice) and adjust seasoning with additional salt and pepper if needed.

Step 9

Ladle the soup into bowls and garnish with fresh parsley if desired. Serve warm.
