Ingredients

  • 3 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.75 cups unsalted butter (cold, cut into small cubes)
  • 1 cups buttermilk (plus extra for brushing)
  • 1 egg (optional, for brushing)
  • 0.5 cups optional mix-ins like raisins, dried cranberries, or chocolate chips

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

If using optional mix-ins like raisins or chocolate chips, gently fold them into the mixture at this stage.

Step 5

Make a well in the center of the mixture and pour in the buttermilk. Use a wooden spoon or spatula to gently combine the ingredients, being careful not to overmix. The dough should be slightly sticky.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it 3-4 times to bring it together. Pat the dough into a circle about 1 inch thick.

Step 7

Using a round biscuit cutter or a knife, cut the dough into 8 equal pieces (or use the cutter to make circular scones). Place the pieces onto the prepared baking sheet, evenly spaced.

Step 8

For a golden finish, whisk the egg with a tablespoon of buttermilk and brush this mixture over the tops of the scones. Alternatively, you can just brush them with a little buttermilk.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are golden and cooked through.

Step 10

Remove from the oven and allow to cool slightly before serving. Enjoy with butter, jam, or clotted cream!
