Ingredients

  • 1 piece Pre-made pie crust
  • 1 cup Granulated sugar
  • 0.25 cup All-purpose flour
  • 3 tablespoons Cornstarch
  • 0.25 teaspoon Salt
  • 1.5 cups Water
  • 2 whole Lemons (zested and juiced)
  • 2 tablespoons Unsalted butter
  • 4 large Egg yolks
  • 4 large Egg whites
  • 0.25 teaspoon Cream of tartar
  • 0.5 cup Powdered sugar

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out the pre-made pie crust into a 9-inch pie dish and crimp the edges. Prick the base with a fork to prevent air bubbles, then pre-bake for 10 minutes. Let it cool.

Step 3

In a medium saucepan, whisk together granulated sugar, flour, cornstarch, and salt. Gradually stir in water, lemon juice, and lemon zest.

Cook over medium heat, stirring continuously, until the mixture comes to a boil. Once it thickens, remove from heat and whisk in the butter.
