  • 0.5 cup Brown sugar
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a medium-sized mixing bowl, combine the wheat bran and buttermilk. Let the mixture sit for about 5 minutes to soften the bran.

In a separate large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

Add the egg, brown sugar, vegetable oil, and vanilla extract to the softened bran mixture. Mix well until fully combined.
