Ingredients

  • 2 sheets Puff pastry sheets
  • 200 grams Mascarpone cheese
  • 120 ml Heavy cream
  • 3 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries
  • 0.5 cup Fresh blueberries
  • 0.5 cup Fresh raspberries
  • 1 Egg yolk
  • 1 teaspoon Water
  • 2 tablespoons Apricot jam

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the puff pastry sheets into 6 equal-sized squares or circles, depending on your preference.

Step 3

Score a smaller square or circle about 1/2 inch (1.25 cm) inside the edge of each tart, being careful not to cut all the way through the dough. Prick the center of each pastry square lightly with a fork to prevent it from puffing up too much.

Step 4

In a small bowl, whisk together the egg yolk and water to make an egg wash. Brush the edges of the puff pastry squares with the egg wash for a golden finish.

Transfer the puff pastry squares to the prepared baking sheet and bake for 12-15 minutes, or until the edges are golden and puffed. Remove from the oven and allow to cool completely.
