Ingredients

  • 1 pound Beef sirloin or flank steak
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Ground turmeric
  • 1 cup Coconut milk
  • 1 cup Creamy peanut butter
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili paste or sriracha
  • 1 cup Water
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 8 pieces Wooden skewers (soaked in water)

Directions

Step 1

Cut the beef sirloin or flank steak into thin strips, about 1/2 inch wide and 3 inches long.

Step 2

In a large bowl, mix together 2 tablespoons of soy sauce, brown sugar, garlic, ginger, ground turmeric, and 1/2 cup of coconut milk. Add the beef strips to the marinade, mix to coat evenly, cover, and refrigerate for at least 30 minutes (or up to overnight).

Step 3

While the beef marinates, prepare the peanut sauce. In a small saucepan over medium heat, whisk together the creamy peanut butter, remaining 1/2 cup of coconut milk, 1 tablespoon of soy sauce, lime juice, chili paste or sriracha, water, and a pinch of salt. Cook for 3-5 minutes, stirring frequently, until smooth and slightly thickened. Remove from heat and set aside.

Step 4

Preheat your grill or grill pan over medium-high heat and lightly oil the grates with vegetable oil.

Step 5

Thread the marinated beef strips onto the soaked wooden skewers, making sure the meat is evenly distributed along the length of the skewer.

Step 6

Grill the beef for 2-3 minutes per side, or until cooked through and slightly charred. Avoid overcooking to keep the beef tender.

Step 7

Transfer the cooked beef skewers to a serving platter, and serve hot with the peanut sauce on the side for dipping.

Step 8

Optional: Garnish with chopped cilantro or crushed peanuts for extra flavor and presentation.
