Ingredients

  • 4 medium Russet potatoes
  • 6 slices Bacon
  • 1 medium Yellow onion
  • 6 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter
  • 2 tablespoons Chives or parsley (optional, for garnish)

Directions

Step 1

Wash the potatoes thoroughly and peel them if desired. Dice the potatoes into small, bite-sized cubes.

Step 2

Place the diced potatoes in a large pot of salted water and bring to a boil. Cook for 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

Step 3

While the potatoes are boiling, chop the bacon into small pieces and dice the onion finely.

Step 4

In a large skillet, cook the bacon over medium heat until crispy. Use a slotted spoon to remove the bacon and set it aside on a paper towel-lined plate. Leave the bacon fat in the skillet.

Step 5

Add the diced onion to the skillet with the bacon fat and sauté for 2-3 minutes until softened and translucent.

Step 6

Melt the butter in the same skillet, then add the drained potatoes. Cook the potatoes over medium-high heat for 10-12 minutes, stirring occasionally, until golden brown and crispy.

Step 7

While the potatoes are cooking, whisk the eggs together in a bowl with the milk, salt, and black pepper.

Step 8

Once the potatoes are crispy, reduce the heat to medium-low. Pour the egg mixture over the potatoes and gently stir to combine. Cook until the eggs are just set, about 3-4 minutes.

Step 9

Stir in the cooked bacon and cook for another 1-2 minutes to warm everything through.

Step 10

Remove the skillet from heat and garnish with chopped chives or parsley if desired. Serve hot and enjoy your Bauernfrühstück!
