Ingredients

  • 2 tablespoons unsalted butter
  • 0.25 cup brown sugar
  • 0.25 teaspoon ground cinnamon
  • 2 large bananas
  • 2 tablespoons dark rum
  • 1 teaspoon vanilla extract
  • 2 scoops vanilla ice cream
  • 2 tablespoons chopped pecans or walnuts (optional)

Directions

Step 1

Peel and slice the bananas into thick diagonal slices, about 1/2 inch thick. Set aside.

Step 2

In a large skillet, melt the butter over medium heat. Once melted, stir in the brown sugar and cinnamon, and cook for 1-2 minutes until the mixture is bubbly and caramel-like.

Step 3

Gently add the banana slices to the skillet, making sure they are coated evenly with the caramel sauce. Cook for 1-2 minutes on each side, being careful not to break the slices.

Step 4

Reduce the heat to low and carefully pour in the dark rum and vanilla extract. If desired and safe to do so, you can ignite the rum with a long lighter to flambé, allowing the alcohol to burn off. Let the sauce simmer for another minute.

Step 5

Remove the skillet from the heat. Spoon the caramelized bananas and sauce evenly over two bowls with a scoop of vanilla ice cream in each.

Step 6

Garnish with chopped pecans or walnuts, if using, and serve immediately.
