Ingredients

  • 6 slices Pumpernickel bread
  • 4 oz Cream cheese
  • 1 cup Shredded sharp cheddar cheese
  • 6 slices Cooked bacon
  • 2 large Eggs
  • 1 cup Heavy cream
  • 2 tbsp Chopped chives
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.

Step 2

Cut each slice of pumpernickel bread into quarters and press each piece into the wells of the muffin tin to create a cup shape.

Step 3

In a medium bowl, beat the cream cheese until softened and smooth.

Step 4

Mix in the shredded cheddar cheese and crumbled bacon until well combined.

Step 5

In a separate bowl, whisk together the eggs, heavy cream, chopped chives, salt, and black pepper until fully blended.

Step 6

Fill each pumpernickel cup with a spoonful of the cheese and bacon mixture, about halfway full.

Step 7

Pour the egg and cream mixture over the filling in each cup, being careful not to overflow.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the tops are puffed and slightly golden.

Step 9

Let the puffs cool in the tin for about 5 minutes, then gently remove them and serve warm.
