Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 0.5 cup (finely chopped) onion
  • 2 cloves (minced) garlic
  • 0.5 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 cup frozen peas and carrots
  • 2 tablespoons (chopped) fresh cilantro

Directions

Step 1

Rinse the rice in cold water until the water runs clear. This will remove excess starch and prevent the rice from becoming sticky. Set the rice aside to dry slightly.

Step 2

Heat the vegetable oil in a large saucepan or deep skillet over medium heat.

Step 3

Add the rice to the pan and sauté, stirring constantly, for about 5-7 minutes or until the rice is golden brown and toasty.

Step 4

Add the chopped onion and minced garlic to the pan. Continue sautéing for another 2-3 minutes until the onion becomes soft and fragrant.

Step 5

Stir in the tomato sauce and mix well, allowing it to coat the rice evenly.

Step 6

Add the chicken broth, salt, and ground cumin to the pan. Stir everything together and bring the mixture to a boil.

Step 7

Once boiling, reduce the heat to low, cover the pan with a tight-fitting lid, and let the rice simmer for 15 minutes without removing the lid.

Step 8

After 15 minutes, gently fold in the frozen peas and carrots. Cover again and let the rice cook for an additional 5 minutes, or until all the liquid is absorbed and the rice is tender.

Step 9

Remove the pan from heat and let the rice sit, covered, for 5 minutes to steam further.

Step 10

Fluff the rice gently with a fork, sprinkle the chopped cilantro on top, and serve warm as a side dish or as part of your meal.
