Ingredients

  • 500 g boneless, skinless chicken thighs
  • 6 stalks scallions
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 2 pieces garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 tbsp honey
  • 1 tsp cornstarch
  • 2 tbsp water
  • 2 tbsp vegetable oil

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

Trim the scallion roots and cut the stalks into 2-inch pieces. Separate the white and green parts.

Step 3

In a small bowl, mix the soy sauce, hoisin sauce, sesame oil, minced garlic, grated ginger, and honey. Set aside.

Step 4

Dissolve the cornstarch in 2 tablespoons of water to create a slurry and set aside.

Step 5

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the bite-sized chicken pieces to the skillet and cook for 5–7 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the white parts of the scallions and stir-fry for 1–2 minutes until fragrant.
