Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium-sized mixing bowl, combine the diced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, cornstarch, and water. Stir well to coat the apples evenly. Set aside.
Unroll the refrigerated pie crusts on a lightly floured surface. Use a 4-inch round cutter (or a large glass rim) to cut out circles from the dough. Gather the scraps, re-roll, and cut out more circles until you have 12.
Place 6 of the dough circles on the prepared baking sheet. Spoon a small amount of the apple mixture onto the center of each circle, leaving a border of about 1/4 inch around the edges.
