Ingredients

  • 1 cup quick-cooking oats
  • 1 cup water
  • 2 tablespoons unsalted butter
  • 1 cup whole milk
  • 3 tablespoons honey
  • 2.25 teaspoons active dry yeast
  • 3.5 cups all-purpose flour
  • 1.5 teaspoons salt
  • 1 large egg
  • 1 teaspoon vegetable oil

Directions

Step 1

In a medium saucepan, combine the quick-cooking oats, water, and unsalted butter. Heat over medium heat, stirring occasionally, until the butter is melted and the mixture is warm but not boiling. Remove from heat and allow to cool to lukewarm (about 100°F).

Step 2

In a large mixing bowl, combine the lukewarm oatmeal mixture with the milk, honey, and active dry yeast. Let sit for 5-7 minutes until the yeast becomes foamy.

Step 3

Add the all-purpose flour and salt to the bowl, mixing gradually until a rough dough forms. Transfer the dough to a floured surface and knead for 6-8 minutes, until the dough is smooth and slightly tacky.

Step 4

Place the dough in a lightly oiled bowl, turning once to coat it with oil. Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft-free area for 1 hour, or until it has doubled in size.

Step 5

Punch down the dough and divide it into 12 equal portions. Shape each portion into a round ball and place onto a greased or parchment-lined baking sheet, spaced about 1 inch apart.

Step 6

Cover the rolls loosely with plastic wrap or a kitchen towel and allow them to rise again for 30-40 minutes, until puffy and almost doubled in size.

Step 7

Preheat your oven to 375°F (190°C). In a small bowl, crack and beat the egg, then lightly brush the tops of the rolls with the beaten egg for a golden-brown finish.

Step 8

Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown on top and the internal temperature reads 190°F (88°C).

Step 9

Remove the rolls from the oven and let cool slightly on a wire rack before serving. Enjoy warm or at room temperature!
