Ingredients

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 0.5 Red onion
  • 1 cup Canned black beans, rinsed and drained
  • 1 cup Corn kernels (canned, fresh, or frozen and thawed)
  • 1 Avocado
  • 0.25 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Rinse and chop the romaine lettuce into bite-sized pieces. Place it in a large salad bowl.

Step 2

Halve the cherry tomatoes and thinly slice the red onion. Add both to the bowl with the lettuce.

Add the rinsed and drained black beans and corn kernels to the salad bowl.
