  • 14.5 ounces diced tomatoes (with juice)
  • 2 cups chicken broth
  • 1.5 cups long-grain white rice
  • 1 pound cooked shrimp (peeled and deveined)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 leaf bay leaf
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Slice the andouille sausage into rounds and brown them in the skillet for 4-5 minutes. Remove and set aside.

Season the chicken thighs with a pinch of salt and pepper. Add them to the skillet and cook until browned on both sides, about 6-8 minutes. Remove and set aside.
