Ingredients

  • 113 grams Unsalted butter
  • 3 large Egg yolks
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Melt the unsalted butter in a small saucepan over low heat or in the microwave. Set it aside to cool slightly.

Step 2

In a heatproof bowl, whisk together the egg yolks and lemon juice until smooth and slightly thickened.

Step 3

Place the bowl over a pot of simmering water (ensure the bottom of the bowl does not touch the water) and whisk constantly to gently heat the egg yolks until they thicken, about 1-2 minutes.

Step 4

Slowly drizzle in the melted butter, whisking constantly, until the sauce becomes thick and creamy. Pour gradually to avoid splitting the sauce.

Step 5

Season with a pinch of salt if desired and serve immediately. If the sauce is too thick, whisk in a teaspoon of warm water to loosen it.
