Ingredients

  • 1 pound hot Italian sausage
  • 1 medium yellow onion
  • 3 garlic cloves
  • 3 medium russet potatoes
  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Heat a large pot over medium-high heat. Add the olive oil.

Step 2

Remove the casing from the hot Italian sausage, if necessary, and crumble it into the pot. Cook the sausage for 5-6 minutes, stirring occasionally, until browned and fully cooked. Use a slotted spoon to transfer the cooked sausage to a plate and set aside.

Step 3

Dice the onion and mince the garlic cloves. Add them to the pot and sauté for 2-3 minutes, or until softened and fragrant.

Step 4

Peel and dice the russet potatoes into small cubes. Add them to the pot and stir to combine with the onions and garlic.

Step 5

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to medium-low and simmer for 8-10 minutes, or until the potatoes are tender when pierced with a fork.

Step 6

Return the cooked sausage to the pot. Stir in the milk and heavy cream. Season with salt, black pepper, and crushed red pepper flakes. Cook for an additional 2-3 minutes until heated through.

Step 7

Taste and adjust seasoning as needed.

Step 8

Ladle the soup into bowls, garnish with chopped fresh parsley if desired, and serve warm.
